Recipe: Courgette Chocolate Brownies



Courgette Brownies




These are great and taste delicious. Another good one to bake with your kid because there aren't many complicated steps to it.


I use Food Thoughts Natural Cacao Powder, it's supposed to be slightly better for you than cocoa powder plus most of the other cocoa powders either have or may contain milk.


250g (shredded) raw courgette (don't wring out the courgette) 
200g granulated sugar
120ml vegetable oil
225g plain flour
25g unsweetened cocoa powder (I use Food Thoughts Natural Cacao Powder)
2 teaspoons vanilla extract
1 teaspoon salt
1 ½ teaspoons baking powder
120g chopped pecans
50g chopped chocolate  (I use MooFree milk chocolate


1.      Preheat oven to 175C/350F. Grease an 20x20 backing tray with oil.


2.      Grate the unpeeled raw courgette and set aside.


3.      In a large bowl mix all ingredients except the courgette, pecans and chopped chocolate, with an electric mixer until it resembles fine crumbs. Stir in the courgette, nuts and chocolate, then pour into the prepared pan and bake for 25 minutes or until lightly pressing the centre feels firm. Cool in the pan for a few minutes, then turn out onto a rack to cool. Cut and serve.


Always remember to check the labels of all the ingredients listed, they are liable to change and add things in whenever they want!!
