Recipe: Vegan Chocolatey Oaty Coconutty cookies
Vegan Chocolatey Oaty Coconutty cookies
This one I've made up myself by amalgamating a few recipes! Its super tasty and again another fun one to do with your kids.

150g Oats
80g Flour
80g Dessicated Coconut
45g Cocoa Powder (See this entry regarding Cacao Powder, tescos also do a dairy/soya free Cocoa Powder)
1 tsp Bicarbonate of Soda
1/2 tsp of Salt
1 tsp of Cinnamon
Some chocolate chips (Cacao Nibs work well and often dairy/egg/soya free)
200g of Soft Brown Sugar
110g of Vitalite
3 tbsp of Golden Syrup (or Maple/Agave)
1 tsp of Vanilla Extract
1 tbsp of Oat/Coconut Milk
Preheat oven to 180c
Step 1: Add oats, flour, coconut, cocoa, bicarb of soda, salt, chocolate chips and cinnamon to a big bowl and mix together until it's all mixed. Set aside
Step 2: Cream the sugar and Vitalite together.
Step 3: Put the milk into a cup. Add the golden syrup and vanilla extract. Stir with a tea spoon until mixed well and combined.
Step 4: Add this to the creamed sugar and mix again.
Step 5: Add the dry ingredients to the wet ingredients a third at a time stirring well. This will become a dough. It shouldn't be TOO sticky.
Step 6: Roll chunks into a ball (I do 50g balls) and place on foil or greaseproof paper.
Step 7: Bake for 15 mins
Step 8: Allow to cool and eat!
